Lombinho de Porco com Tomilho
2 pork tenderloins (about 750g)
1 c. soup of chopped fresh thyme
1 c. soup ground pepper
2 cloves garlic, minced
qs white wine
salt and oil q.s.
Season meat with the garlic, salt, pepper and thyme. Rub meat well. Add a little olive oil and white wine. Let stand 20 minutes. Heat a frying pan and sear the meat until nicely golden. Transfer the meat to a container of oven and add the juices from the pan. Sprinkle with a little water. Take the pre-heated oven at 200 º about 30 minutes. Slice the meat and accompany with rice and sultanas and saffron
