Who loves microgreens ???
The microgreens are small forms of vegetables and herbs, harvested less than 14 days after germination, as soon as the first leaves are formed. Was recently published the first scientific assessment confirmed that microgreens are four to 40 times more concentrated in nutrients than their vegetables or herbs in their mature form.
For example, red cabbage microgreens are 40 times more rich in vitamin E and high in six times more Vitamin C than the mature form purple cabbage; the coriander microgreens are three times richer in beta-carotene than ervinhas that we used to use in our cooking.
